Our Story
Our story is one that begins with a CURIOSITY for all things culinary and one that, with time, has found its ultimate expression in the beauty of burnished baguettes, the intrigue of laminated pastries and the fascination of fermentation and sourdough complexity. It is a story that is inspired by PASSION, CREATIVITY, the need to return to GOODNESS, SIMPLICITY and the ARTISAN WAY. Our story is one that is currently unfolding and evolving in ways we never imagined and we are finding delight in the possibility of it all!!
The adventure began 25 years go in the hospitality industry when Scott began a cooking apprenticeship. He qualified as a chef, then an educator, baker, represented Australia in bakery teams in Germany and Italy, won scholarships to further his studies in San Francisco and Belgium and is now recognised as a Fellow of the International Specialty Skills Institute. More recently he was awarded the title of MASTER BAKER OF AUSTRALIA.
Whilst he has continued a part time role as a bakery instructor within the Tafe system, a hunger has developed to share his love of beautiful hand-crafted bread and pastry products LOCALLY with the desire to restore RESPECT for TRADITIONAL methods and advance the CRAFT.
Thus was born The ARTISAN CRUST – a pop up Boulangerie and Patisserie appearing bi -monthly at the Emerald Markets.
Over time this little venture needed solid walls and a more permanent structure to house its hopes and dreams. The perfect solution was found nestled quietly and unobtrusively upon a ridge in Cockatoo. An aged and weathered timber clad sawmill shed sits there amongst the gums – its internal space has now been transformed into a polished bakery.
And where there is knowledge and passion, heart and conviction there comes an innate need to share it with others. Our latest undertaking has been our bake school, or as we more fondly refer to it as Baking in the Bread Shed. Day courses include Bread Basics, Sourdough and Laminated Pastries.
At the very heart of all we do is a desire to impact the world around us in a life altering way. Whilst operating at a local level, we do so with a global conscience and with recognition that collective effort can bring about change.
It is our HOPE that our products will nourish and SUSTAIN you. A percentage of all profits raised is donated to underprivileged communities so that OTHERS may be SUSTAINED also. We are thrilled to be affiliated with TEAR Australia and the work that they do.
